Non-functioning tumors tend to grow quickly.
Yours has shown it is growing. Which means it needs to be treated sooner rather than later. You need to find a larger hospital or university that has a pituitary center so you find a proper doctor. A regular endo or neurologist cannot help you.
There are pituitary centers in many other countries. Much research comes from outside the U.S.
Well it's a non-functioning adenoma. I've been to three different doctors, all of whom asked me to ignore the cognitive symptoms (not sure that's helping anyone). I'm due for another scan soon, we'll see..
Oh, and I'm not from the US; there are no pituitary centers where I'm from.

I would seek out a new doctor imho. Watch and wait is ... Not advisable for most pituitary lesions. If yours is growing, it especially needs treatment. Also, the fact you just say "pituitary" tumor without saying the exact type is very troublesome. You need to know the exact type and then you can know the treatment.
Some can be treated with meds, some need surgery. But you need a pituitary center and find out what you have and get treated. Get copies of everything too.
