Found some new healthy food in the freezer section .. as this is sometimes the way I plan for my work lunches! I know, I could cook from scratch and control all the ingredients, but I have come to rely on a great number of frozen entrees to fit my busy lifestyle.
Today I tried a a new one from Kashi called Mayan Harvest Bake. Much to my surprise, it was also Vegan and remarkably tasty if you like something full of flavor and on the spicy side. Have always wondered what Plantains tasted like and no, the Food Network is right, they do not taste like bananas.
This dish boasts plaintains, black beans, sweet potato & Kale .. in addition to 7 whole grain pilaf, Amaranth & Polenta with spicy ancho sauce. It also has pumpkin seeds .. a personal favorite! It has 9 g of protein and 8 g of fiber.
