It doesn't sound like you're talking about completely skipping the meal; it sounds more like you're planning to "downsize" it, considerably.
You can do that, but make sure your soup is broth based, not cream based and be sure to eat some protein with the fruit and/or veggies. For instance, eat an apple with peanut butter or cheese or cut up veggies with hummus or plain Greek yogurt.
Make sure you're eating enough calories and that your eating program is that you can stay with over the long term, not just a "diet".
You need to eat your calories a day. Instead of skipping meals eat healthy fats and proteins and you will find yourself losing faster and getting results!
They say it's best to actually eat 6 small meals a day instead of your standard 3 meals a day.
You could always make a smoothie or something like that as a replacement. It's still high in nutrients and good for you.
