What is going ON?

I've had some health issues for the past couple years. I'm 32 years old and exercise (run on elliptical for 45 mins - 1 hour 4xs a week but I'm still a size 12 (US). I've done this level of exercise for most of my teenage/adult life. My diet is EXTREMELY healthy. I have severe constipation too - I was told by my GI that I have Irritable Bowel (after they consistently found "nothing wrong w/me".) SO, according to numerous specialists this is what I have: IBS-C (maybe due to medication), PAST addiction/alcoholism, depression, anxiety, hyperactive gallbladder, "Minimal" fatty liver, hypothyroid. I've been on Subutex for the past 4 years (it has saved my life.) The thyroid I got after the birth of my daughter in 2008. I am wondering if my body is just still healing from my self-destructive behavior b/c I know that after quitting drinking, there's a huge immune system response.
I have BAD GI issues. They found fatty liver (from alcohol excess - sober for 14 months) but it's resolving and nearly gone.  I got a HIDA scan and they found hyperkinetic gallbladder (91%) - it's very painful and I have these strange attacks but it's taken FOREVER to get this far. Many, many specialists (Cardiac, Rheumatologist, Pulmonologist, Allergist/Immunologist and above all GI) to diagnose this issue and I don't think they've found it all per se. I think I have Fitz-Hugh and Curtis syndrome b/c I've had pleurisy and RUQ PAIN - I'm just trying to find a diagnosis. I cannot be this age and this fit and be having this inexplicable pathology in multiple organs w/o something larger going on. Also, up until recently, I had oil (like puddle in the rain w/gasoline in it) in my urine which suggests that I'm not breaking down fats. I had an upper endoscopy and they did a biopsy so it's NOT Celiac's (too bad, it's all the rage, haha.) My dad had diverticulitis (among about 20 other issues, mostly cardiac.) About addiction, I had a genetic test done that indicated that I was liver-wise an extensive metabolizer. Hence my addiction issues, and prob that gene mutation I read about too. It's stigmatizing but still, it's a disease. One more symptom of gallbladder issues - I break out in small clear fluid-filled bumps on my hands. I have been tested for EVERYTHING it seems. Also, I had acupuncture and the response when he did gall bladder points was incredible so I knew before the HIDA scan that this was an issue... What do you guys think? I know this is pretty stream-of-consciousness/disorganized, sorry!

Sorry, last thing, I swear! Also, I've had heart palpitations. Pretty minor and of course, I went to a cardiologist and he said "the problem is NOT your heart, your heart is HEALTHY" and for diagnosis put "abnormal heart sounds." From what I noticed with ECG at home, I have PAC especially after eating.

Oops, forgot to say... I have swelling at times in hands and a teeny bit in feet and all-over body pain (stabbing-like). My eyes are red and veiny and sometimes cream-colored (better these days) but these are SCARY symptoms.
I've gotten all kinds of tests including a cancer one (at oncologist) white-blood cell count one (b/c this time last year, right after quitting drinking, I had slightly elevated WBC.) I had a colonoscopy in 2012 too. I've begged for a biopsy of the liver/gallbladder and maybe now that I have hyperactive GB, they'll do it to rule out adenomyomatosis??
