Having toilet issues lately

So this all started off as I would feel nauseas after eating. Went to doctor told I had GERD. Was prescribed omeprazole, and was taking that awhile. Then one day I had an anxiety attack, (have bad anxiety for few years now). My father came home after an hour and when he got home noticed my face was flushed and looked bad. Next day went to see doctor and just said allergies/panic attack caused that. And I told him the omeprazole wasn’t helping as much as it should and he tried Zantac. That helped more but didn’t exactly resolve it. The doctor also said if I were to get nauseas after eating to take an extra pill. So I went out with a few friends and got food (sushi to be exact) I was driving one of them home and within 2 minutes of leaving I had to use the restroom (#2) and quite frankly could barely hold it in. I was barely able to hold it til we got to his house and that was only 2 minutes. Thought nothing of it, maybe food poisoning or just upset stomach. So pretty normal next few days, then about a week later my bowel movements started occurring more frequently like 2-3 times a day. And I usually tended to have a pretty routine schedule. You know I could always wait to use the restroom til after work and it never bothered me, never felt the need to just kinda taught myself a routine to only use the restroom when I’m home. But that was no longer the case. When I had to go, it came on suddenly and was hard to make it to a restroom. Had to quit my job and stay home because it was unfair to just be on the toilet half the time. So I went to gastroenterologist, they took urine tests, blood tests, physical exam and ultrasound. Was told I have non alcoholic fatty liver and gallbladder sludge and everything else looked normal. Gastro put it down to ibs. And I’m not saying he’s wrong at all, in fact I’d say he’s probably right I mean he knows a lot more than me. But I was just wondering if anyone has a different opinion and I believe if dealing with what is malabsorption and if you think so or don’t please state your opinion. Okay so for the malabsorption and why I think is this: I go to the bathroom more often, my stool usually contains big pieces of food, (not just tiny pieces, I’ve had diarrhea and even normal bms with full pieces of food. For example last night I had fried mushrooms at  restaurant, this morning woke up and saw full pieces, like the actual half a mushroom or however much I swallowed, like it wasn’t broke down at all. Also my stools lately have floated sometimes, most of the time they’re really horrible smelling, like more than it used to be. And sometimes they look greasy and gross. So if anyone has an opinion on this please say so myself or some good questions I should ask my gastroenterologist when I see him in a week.
