Okay, you've got one answer. Now, since you're going to be taking antibiotics, go to the drugstore and pick up some probiotics. You want to probably use either Culturelle or Digestive Advantage-IBS. Start taking them to off-set (hopefully) any deleterious side-effects of the antibiotics. Take the probiotics once a day (or as directed) and take them at LEAST 2-3 hours after you take the antibiotics.

Do a search on Celiacs Disease or Gluten intollerance. Celiacs disease is most commonly misdiagnoses as IBS for several reasons. Most docs just dont know about Celiac and there is no treatment for it.
Obviously I'm not a doctor but your symptoms could lead to Celiac. If indeed this is what you have the only cure is to illiminate all gluten from your diet. Items like bread, pasta, beer, all wheat, barley and rye products. Let me know what you think.
It's possible that part of the problem may be the result of not having your gallbladder any more. It's unfortunate, but many people find that after surgery they're not longer able to processess fats the way they did before. This may be due, in part, to the unregulated release of bile from the common bile duct into the duodenum. Bile is a 'irritant' and without 'foods' to mix with - because your not eating when that bile is being released - it moves through the small to the large intestine and irritates the heck out of those tissues.
If that's what's happening you may want to try following a low fat diet and see if it's of help. It's not going to change overnight, but over time it should get a bit better. In addition, you may want to talk to your doc about the use of questran or something like it. It's a bile binding resin and it will help to soak up the bile.
The mucus is probably present because your system is trying to protect itself - and mucus is a 'first-line' defense.
