Recurrent pain under breastbone!!

I just had my gallbladder taken out. I had gallstones and what they thought were attacks and biliary colic. Did that 2 weeks ago Friday and my biggest fear was that it wouldn't fix anything and I would have taken out that organ for no reason and have to deal with the side effects for the rest of my life. Sure enough not even a week after surgery I was in the ER for the same pain as before surgery. My surgeon was out of town and the nurse advised the ER. Nothing came of that. CT scan didn't show any left behind stones, just some air, fluid, and ileus - all normal after surgery.
This all started shortly after having my 2nd son and he just turned 21 months. The pain is right below my breastbone and comes and goes both in severity and episodes. It's like a crampy ache that can get pretty intense and last all day. My primary doctor put me on omeprazole last September thinking it was due to stress and after a month of that and not feeling better he increased the dosage and referred me to a gastroenterologist. There they did an ultrasound on my gallbladder and found the stones. Also did an upper GI scope thinking maybe an ulcer, and that was normal. At the time of the scope I had just been diagnosed with pneumonia and let me tell you I have never been so sick from antibiotics before!!! I couldn't even stomach amoxicillin. I blame the omeprazole for the reason I got so sick in the first place and possibly why I couldn't stomach the meds. I stated a probiotic at that time to help. Well other than some mild gastritis, the scope and all biopsies were normal.  Also did a hida scan on the gallbladder showing 37% efficiency. My gastroenterologist basically gave up on me, saying he had no idea why I'm in so much pain and kept prescribing me different meds. Which I don't want!! I even had him test me for celiac because he suspected my villi were flat but it was negative and the biopsy showed they weren't. After another trip to the ER, they were sure it was my gallbladder. Surgeon also thought it was the culprit and assured me my problems would instantly stop with it removed. In addition to the daily pain, it also wakes me at night, where I feel like I'm starving to death! And nothing helps. I keep water by the bed to sip on and I've tried eating but it doesn't help either. It's not true hunger pains... and I don't want to get in the habit of eating at night anyways. This specific symptom actually got worse after surgery where the feeling of starving lasted all day in addition to waking me up. I work from home and have 2 boys and I can barely get through the day. I'm getting depressed and my anxiety it getting worse. I don't sleep well and I'm just really struggling overall. The area on my abdomen is also tender to the touch. One last side note.... I did get some sort of stomach virus while I was pregnant where I threw up repeatedly and became very dehydrated, causing heart palpitations. That all resolved after some time and anxiety meds. I am on no current medications, only taking a daily probiotic. Stopped the Percocet a week after surgery.
