Severe Gastric Issues for Over a Year: What Does This Sound Like?

Hello,
I have been experiencing severe gastric distress for a little over 16 months now. I have diarrhea and severe stomach pain / nausea after eating. My stool has been black / tarry but is usually completely liquified / unformed with lots of undigested food in it. I have diarrhea several times a day. In addition to this gastric distress I have been experiencing mouth ulcers, extreme fatigue, night sweats, and weight instability -- gaining and losing rapidly.
I have a gastro doctor who I am very happy with. I've gotten both a colonoscopy (slight inflammation was found) and endoscopy (slight esophagitis found). I am currently taking Zofran, Hyoscyamine, and Promethazine (both oral and suppository). While this provides temporary relief it is not a permanent fix.
I have a CT scan with contrast in a few weeks to see if there's anything they can pick up on there. I have tried everything from eliminating certain foods from my diet (dairy and gluten) and limiting my alcohol intake, but to no avail.
My quality of life is so beyond poor right now. My body is in constant war with itself and I am so tired of being sick and tired.
Below are my recent blood test results. My doctor has not disclosed her opinions on them yet, so I would like to see if any of you had a feeling about them.
Does anyone know what this could possibly be? Or has anyone had a similar experience?

I had similar but was diagnosed with ulcerative colitis.  I'd imagine that would have been determined by now.  Do they try to help the situation by adding on medication for irritable bowel to see if that is helpful?
