I recently had blood work done to check my iron. My results are as follows:

Iron: 39/normal
TIBC 401/normal
UIBIC 392/high
Iron Saturation 10/ low
Ferritin, Serum 11/low
What could be throwing 3 of those levels off and what could be done to change the results?

Hi!  Hopefully the doctor who did the test for you will explain the results.  They always need to do this.  Here is some information on testing for iron https://www.webmd.com/a-to-z-guides/iron-blood-test#1.  

What prompted the test?  Were you having symptoms of anemia?  The good news is that your iron is normal!  Low iron saturation involves the absorption of iron from the intestines (and food you eat). This is low for some reason. Your diet can play a role in this. Low ferritin serum also is indicative with a problem with iron deficient anemia.  Diet can help as can supplementation. Talk to your doctor about that.  UIBC being high also is related to iron deficiency.  

I do think your results are a bit confusing.  But it appears the bottom three factors are indicating a problem with iron deficiency.  https://www.mayoclinic.org/diseases-conditions/iron-deficiency-anemia/symptoms-causes/syc-20355034.
