Remember 1-2 dreams every night?

For the last couple of months, I've been remembering my dreams when I wake up. Every morning.
They are rarely stressfull, most are just neutral.

Should I worry about not getting a good quality of sleep or deep sleep?
I'm not really stressed, even though a lot is happening.

For a period of 2 years , I would wake up every 2 to 3 hours.  Eventually, I was waking up every hour.  I was exhausted all of the time.  I had a sleep study done, and I was diagnosed with sleep apnea.  I purchased a APAP (automatic positive air pressure) machine.  I cannot tell you how much of a positive difference that has made.  I am actually waking up rested!  Interestingly, I have been dreaming like crazy recently.  I am just glad to be getting 8 plus hours of sleep each night!

I've read vitamin B6 help people to recall their dreams.
Vitamin B6 is found in whole grain cereals, legumes, fruits (such as banana and avocado), vegetables (such as spinach and potato), milk, cheese, eggs, red meat, liver and fish.

I do believe that remembering your dreams happens when you are not in deep enough sleep.  However, you are waking up this way meaning you may rouse at some point in your sleep and become more awake and then doze or light sleep until morning.  The bigger question is how are you feeling? Are you fatigued during the day or anything?

I feel like I need 8 hours of sleep to really function, but then I feel fine during the day. Get up around 7 am and go to bed around 11 pm. When I get the chance, I do take a nap during the day.

But I find it odd that I dream so much. Most often, I just remember what I dreamt right before I woke up (or it feels that way), and not entire stories.
You sound like you get pretty solid sleep.  You aren't up during the day and functioning pretty well.  At least they aren't bad dreams, right? lol  What do you eat before bed?  I doubt that has anything to do with it but hey, might as well check for patterns.  And you aren't under much stress right now?

Overall, again, I think you are probably just sort of waking up before it's time to get up and light sleeping when you have the dreams.  But that your actual hours are pretty on target for being healthy in terms of the sleep you get.  :>)
