Parotitis

Is there any chance that HIV would cause a parotid gland to swell within days of infection?

There is zero chance of experiencing symptoms days after an encounter.  I see from your post in STDs that your gland swelled the next day.  There is NO STD that will cause symptoms to appear the next day, and HIV will not do so either.
