This is a good summer pasta salad.
16 oz. penne pasta (I prefer whole wheat)
1 head of broccoli ,cut into florets
1 red bellpepper, cut into strips
1 (6.5 oz.) jar marinated artichoke hearts
1/4 cup grated parmesan cheese
salt & pepper to taste
Bring a large pot of slightly salted water to a boil. Add pasta and cook for 8 minutes. Add broccoli and cook 2 minutes more. Drain pasta ans broccoli and rinse with cold water until cool.
In large bowl, combine pasta, broccoli, red bellpepper, the artichoke hearts (with the marinade) parmesan cheese,salt and pepper. Toss and serve.
