Sweet Caramelized Onion Dip!!!

Yes, you can have onion dip!   Eat with baked chips, crackers, veggies, even on sandwiches and wraps!   This one is fantastic.  It tastes better after sitting in the fridge, so make it the day before.  From Hungry-Girl.

2 large sweet onions, chopped
6 T fat free cream cheese, room temp
1/2 cup fat free sour cream
1/2 cup fat free mayo
1 T light whipped butter or light buttery spread
1 tsp dijon mustanrd
1 tsp blasamic vinegar
1/4 tsp cayenne pepper
1/2 tsp salt (can cut down or omit if you need to limit sodium)

--Heat butter in a large pan over med-high heat.  Once butter has coated the bottom of the pan, add the onions, cayenne pepper, and salt.
Dont worry if the onions are piled high in the pan, they will cook down.
Saute for 10 min, stirring frequently.

--Reduce heat to med-low, and cook for an additional 20-30 min, stirring occasionally, until onions are browned and caramelized.

--Meanwhile, in a large bowl, combine cream cheese, sour cream, and mayo.  Whisk until smooth, then refrigerate.

--Once the onions are caramelized, add mustard and vinegar to the pan.  Continue to cook for 5 more mins, stirring frequently.  Remove onions from heat and allow to cool.

--Once cool, add onions to the large bowl and mix your dip thoroughly.  Refrigerate overnight to allow flavors to combine.  Serve at room temp.

Makes 6 servings.
Per 1/3 cup serving:  74 cals!!!!!  1.75gm fat, 11 gms carbs, 0.5gms fiber, 3.5 gms sugar.
