Good Food Friday

Sorry for the lame name, but it's the best I could come up with.  Creativity is not one of my strong points :)  So we were talking last week about how it would be fun to share some of our favorite receipes.  Steph asked for one of mine, so I'll start off.

Chuck Roast Au Gratin

2-3# Chuck Roast
2 Cans Cream of Mushroom Soup (10oz?)
2 Cans of Mushrooms - 4 oz (un salted kind?)
4 Potatoes - peeled & cut up
Grated Chedder Cheese

Oven @ 350 degrees.  Cook roast in 9x13 pan uncovered 1 hr.  Drain fat.  Add mushrooms, mushroom soup, 2 oz water (1/2 mush can) & potatoes.  Cover with aluminum foil & bake 2 hrs.  Uncover.  Top with cheese.  Put back in oven until cheese melts - about 5 min.

So that's my mom's receipe.  DH does all the cooking, so he has tweaked it just a bit.  Basically he gets a larger piece of meat and cooks uncovered for 1 1/2 hr.  He also adds more potatoes and water.  It may take a few tries to get the consistency that you want.  But it is super yummy.

Growing up, my mom was the worst cook ever, but this was one of her few winners.  One night my father asked what's for dinner and mom said Chuck Roast Au Gratin.  Jokingly, my father responsed - "we're having rotten chuck roast?".  And from that day forward it became to be known as Rotten Chuck Roast in hour house.  DH was so confused the first time I told him I wanted Rotten Chuck Roast :)

Rotel is diced tomatoes w/ green chilies. If Mikayla can't eat spicy food then I would get the mild one to try if you make it.

Everything sounds good, I would share my daughters favorite recipe but I do it by memory now and I don't know how much of what to use...I make it different everytime!  I will try to figure out the ingredients and amounts for everyone.  Few questions though...

What is Rotel?

Ok, one question.  I was going to ask what #3 chuck roast was but then I reread it.

Jenn - we only have 2 to cook for and DH still thinks he's cooking in a restaurant.  I wish I could send all our leftovers to you guys!

This is so much fun!  I can't wait for DH to try some new stuff.  Our menu has gotten rather redundant lately.

Here we go again...I had it all down then DS unplugged my computer on accident UGH
This is what I'm making for dinner.

Taco Soup

1lb ground beef/turkey
1 onion chopped
3 cloves garlic crushed
4 cans of beans(I use 2 black, 1 red, and 1 white)
1 or 2 cans of corn
1 can of Rotel
1 packet of dry ranch
taco seasoning

Brown meat and drain, set aside. Saute onions and garlic in olive oil. You can use powdered if you'd like. Add the rest of the ingredients. Start with a few tablespoons of taco seasoning..add more if you'd like. Simmer for at least a half an hour. I have cooked the beef, onions and garlic then added it and the rest of the ingredients in a crockpot and left it all day too. Either way is good. Serve with corn chips, cheese, and sour cream.
Jenn- This one feeds my 5 and they love it! It's also easy and cheap. I have doubled the recipe and they will eat the leftovers (which is always good)

EZ Chicken Broccoli Casserole

4-5 Boneless Chicken Breasts
2 Can cream of Chicken or Mushroom
Broccoli
Mushrooms
Veg of choice
1 box stovetop stuffing
Grated Cheddar cheese
Milk
Chicken Broth

Boil the chicken in the broth.  Cut the chicken into bite size pieces and place in the bottom of 9x13 pan.  Steam Veggies and place in pan with the chicken.  In small bowl mix theeach can of soup with approx. 1/4 can of milk.  Pour mixture over Chicken and veggies & top with some of your cheese.  Sprinkle box of stuffing over the casserole. (uncooked) Sprinkle remaining cheese on top of casserole.  Bake at 350 approx 30 minutes or until golden brown.

My kids LOVE this meal & it is super easy.
