anyone know any good cookbooks for low GI food?

I need to start eating more low glycemic index foods. Anyone know of good cookbooks?

I have the PCOS diet, and PCOS diet cookbook. they're fantastic!
Just looking for more so I have a bit more variety!

in particular I am interested in learning more about making low GI bread!

I recommend "The PCOS Diet Cookbook"
It has a lot low GI recipes in addition to other useful information and advice.  A lot of the recipes make large portions so you can easily freeze them and reheat later.  This convenience factor works great for me.  I am a picky eater and have found many recipes that I really like.
