Turkey meat enchiladas are so good!
All I do it cook down ground turkey meat with some of the premade salsa out of the jar with a few seasonings like garlic powder,onion powder, and tonys. Add a little enchilada sauce out of the can to the meat then take the tortillas fill them with the meat and pour the rest of the sauce and top with cheese and bake for about 20 mins or until cheese is melted.
