Symptom length + difference in symptoms male/female?

I've seen conflicting pieces of information regarding when to get a gonorrhea/chlamydia test done and my partner is exhibiting random symptoms (open relationship). Without going into too much detail, I had oral from a girl last sunday (5-10 mins) and all was fine. The same evening my partner performed oral on me. The next day we both wake up with a slight cough and splutter, and i had a huge headache, but originally thought because i'd had 2 nights out in a row and it was getting the better of me. We then had normal sex and felt kind of better. Tuesday comes and i'm fine, but my other half complains of a sore throat.

Thursday came and she's noticeably worse, this time her throat sounds like it's closing, so much her voice changed. Keep in mind that i've had no symptoms of any STD/STI so far. We got booked in at a doctors and they said that it could be viral/bacterial (I was thinking strep throat and her symptoms where like oral gonorrhea) and she was given some penicillin. 7 days later and her throat is completely fine, she's still on the course of penicillin. We've not had sex since last monday. It's now tuesday (9 days later) and she's woke up and complained of a very itchy vagina, but no soreness or discharge? This would make it 9 days since original contact but i'm still symptomless? I read about gonorrhea being much more likely to show symptoms in men. Could this be an STD/STI? Or is my anxiety just getting the better of me? When should I do a test for maximum accuracy?
