E Coli? I hope not.
Hello. I was raking leaves and picked some up without washing my hands at all. I say that for argument sake. It was dried a few hours after I picked up a slice of apple to eat. It didn't seem like there was poop but dirt; IF there was poop it was in small amounts. How risky am I for e coli? How likely is it that it'll show up in a 26 year old body by Monday? If not how long can I expect for symptoms to be able to show up?
You are 26 and healthy. Everyday people are exposed to toxins, air borne illnesses, common viruses, the flu. The list could go on and on. Rarely do people fall ill quickly, especially those without compromised immune systems. Unless you have reason to believe you are immunocompromised, you statistically are going to be just fine. Seriously, there are worse things in a fast food hamburger. Going forward practice hand washing. No need to stress though. I wish you all the best!
Unless your immune system is compromised your chances of getting e coli in this instance are next to nil.

I’m not testing it but what am I at risk of if not E. coli? Hopefully not raccoon ringworm.
I dont think your gonna get any form of ringworm either or any other illness or parasite for that matter...

Ringworm is a fungus. Raccoon roundworm is found in areas with a rampant population of raccoons. Raccoons tend to defecate in a shared space. If that were the case, I'm pretty sure you would have realized you were dealing with feces, and you would have a raccoon problem. Think of how many little kids play in piles of leaves. Kids touch their faces and mouths a lot. Small children also tend to have less immunity. If it were that easy to transmit, you would have a lot of sick kiddos. You are going to be fine.
Seriously doubt you will contract e coli if you have a normal immune system.
