Undiagnosed Chronic Inflammation - headaches/sensitivity to light and sound

My father - 54 yrs old male, medium build - has been suffering for 4 years with some sort of chronic inflammation issue. It all began with a bulging disc injury in his back (without cause) which has appeared to spiral into a host of other issues: sensitivity to light and sound which produces sharp headaches, an inflamed gull bladder which needed to be removed, irritable bowel syndrome, allergies to gluten and sensitivity in crotch area have all been issues he's dealt with so far.

He's been through an uncountable amount of specialists (neurologists etc, in B.C, Canada) over this period and to no avail or definitive diagnosis. Some have interpreted it to be possibly relating to "central sensitization syndrome." He's been through countless drugs and naturopathic treatments. While some of the treatment has helped with some of the above symptoms, what most prominently remains unsolved are these sharp headaches. It's interesting because they're not exactly prolonged aches, but rather they flare up hard and almost like a spike, especially in reaction to loud noise or prolonged exposure to light.

We're really at a loss with his case, he's been on disability leave from work this whole time and we just want him to have his life back. I feel for anyone who is/has a loved one going through something like this. If anyone has any similar experience to this case and can share their approach/diagnosis it would mean everything. I think it's been time for us to consider private healthcare somewhere in the U.S for quite some time now, please refer any resources if you have any.
