what kind of a diet should a allergic person be on ?

my mother is allergic to all nuts , dairy products ( fortunately except yoghurt and cheese ) and seasonings . last day our vitamin D assay results came and her results were not really joyful as it was only 12.4 ng/ml (mine was 31 ng/ml) thus i am looking for ways to boost my mothers Vitamin D levels.
LONG STORY SHORT: what kind of a diet should my mother be on ? , what should she eat ?
please reply to this simple but serious question of mine , as i really care about her and love her by all my heart.
