Anzac Biscuits

These were sent to our Australian and New Zealand soldiers during World War 1 because they were long lasting.

ANZAC BISCUITS
Ingredients:
2 cups of rolled oats
2 cups flour
2 cups coconut
1 1/2 cups sugar
250g butter
4 tblspns golden syrup
1 tspn baking soda
2 tblspn boiling water
Method:

Turn oven to 160'C. Lightly grease oven trays.

Put oats, flour, coconut, sugar in big mixing bowl. Melt butter and golden syrup in pan. Take off heat.

Mix baking soda and boiling water in a cup. Add to melted butter in the pan. Quickly add to big mixing bowl. Mix well.

Roll tablespoonful lots into balls. put on trays 5cm apart. Press lightly with fork.

Bake for 20 minutes, one tray at a time.

Thnx for posting. I'm an Aussie born and raised and am in Germany now - so very missing out on some great traditional Aussie recipes. Golden syrup is not easy to find here, might  have to go to a British shop to get it. Yummy......

They were homemade and then sent over in care packages,I'll post some other Aussie recipes later,like lamingtons and pavlova,

I am going to tell the story along with them ..'.Anzac Biscuits ' were they made in a cookie, biscuit' factory or home made and sent to the troops ?

When these come out of the oven they are soft but harden while on a cooling rack.

Yes a lot of people bake,make white Christmas,individual puddings and cakes to give as gifts.

ooohhh what a history this is one I have never heard about, but am going to try especially with the Thanks giving and  Christmas holidays coming up, do you have that tradition in Australia, Donna, of Christmas cookies being home made,I was delighted when I came to the US and was given a beautiful tin with gorgeus choc chip and other cookies in it, in UK  its kind of about mince pies ..and Christmas Pud and cake...
