Tabbouli
Tabbouli is my altime favourite salad and rather healthy due to the high amoutn of fiber. Itsa origin is from the lavant countries. Its very easy to make and delicious
- 1/2 cup bulgur or cracked wheat (smaller grains better)
- 1/2 cup lemon juice
- 1/2 cup olive oil
- 250 gms paresly, finely chopped (about 6 cups)
- 2 ripe big tomatoes, finely chopped
- Handful of chopped green onion (shallot)
- Handful of finely chopped fresh dried mint
- 1/2 small lettuce, fine-medium chopped
- salt
Soak bulghur until tender (lukewarm water for at least 1 hour)
Chop all the vegetables.
In a large bowl add all the ingredients including the bulgur. Mix well and add salt to season (ot to how your taste buds like).
Serve with lettuce 'cups'.
