1-Is ice cream every day okay--absolutely! Ice cream has a kind of carbohydrate which is digested slowly which, in addition to the fat content) keeps your blood sugar levels constant.
2-The weight gain of 2.5 lbs in one week was probably due to a sudden change in your eating habits. Relax--the weight you gain before 28 weeks directly benefits your babies--after 28 weeks, it has very little effect on their birthweights.
3-The risks for gestational diabetes are increased with 1) being overweight of obese prior to pregnancy; 2) a diet high in sweets and processed carbohydrates. Red meat and ice cream will not give you gestational diabetes--your are eating a diabetic diet now--so relax and enjoy.
A nap or two everyday will also greatly improve your babies' growth.
