Sometimes found labeled as “golden trout,” “steelhead,” or “steelhead trout,” farmed rainbow trout is available from sources all over the world, but the Monterey Bay Aquarium suggests buying US-raised trout because the farming practices are eco-conscious. Trout is mild but meaty, so it stands up well to grilling or broiling: brush both sides of skin-on fillets with oil and cook a few minutes, skin side down, then turn carefully for a final minute on the heat.
