Easy to make with ingredients on hand:

4 Tbsp. butter
4 oz. unsweetened chocolate
2 C. sugar
4 XL eggs
2 C. flour
2 tsp. baking powder
1/4 tsp. salt
1/2 C. walnuts
1 C. powdered sugar
In lg heavy saucepan over low heat melt butter + choc. Cook, stirring occas till smooth. Remove from heat, add sugar. Stir in eggs, one at a time, beating after each. Sift in flour, baking powder, + salt. Add nuts. Must be refrigerated 1-1/2 hr or overnite. With oven at 300 degrees, line sheets with foil. Powdered sugar on palms, roll 1.5 inch balls and place 2 inches apart. Bake about 20 minutes till barely semi firm, rotating once. Cool on wire racks.
Here's an easy, but good, one:
Chocolate Fudge Crinkles
1 (18.25 oz) box devil's food cake mix (Betty Crocker Super Moist suggested)
1/2 cup vegetable oil
2 large eggs
confectioner's sugar
Preheat oven to 350. Stir, by hand, dry cake mix, oil and eggs until dough forms. Dust hands with confectioner's sugar and shape dough into 1" balls. Roll balls in confectioner's sugar and place 2 inches apart on ungreased cookie sheet. Bake 8-10 min or until center is JUST SET. Remove from pan after a minute or so and cool on wire racks.
1 1/3 cups flour
1 tsp baking soda
1/2 tsp salt
1/2 cup sugar
1/2 cup packed light brown sugar
1/2 cup Crisco
1/2 cup peanut butter
1 egg
1 tbs milk
1 tsp vanilla
Mix all together on low speed except flour. Add flour in 2 parts. Roll into 1" balls or whatever size you prefer. Roll balls in sugar (additional sugar not from recipe)
Bake 375 for 10 min.
Immediately press Hershey Kiss in center. Let Cool.
I buy the large bag of kisses and unwrap them before cookies are baked. You have to be quick to get them on the hot cookie.
Happy Christmas Cookie Day Port!!!
