What's Cookin'?

Yeah. Off topic. The Thanksgiving post a few weeks ago got us all talking about our food and ethnic/cultural traditions. Naturally we side tracked a little to Christmas. I had forgotten that we used to eat fried smelt on Christmas Eve until you guys got into the Seven Fishes.

So, what's on your menu this year?

  Ham glazed with pineapples and cherrys
  Hash brown potato cassarole
  Cream corm with cream cheese
   Home made rolls
   Jello salad
   Mashed potatoes for the  kiddos
   Apple pie
    Mint cream pie
      Oh, and deviled eggs
                             I'll have a bite of everything then eat salad..

mmMMmm. So much good sounding food!  

I'm a lightweight. Got the calamari cleaned and cut. Ran the zucchini through the mandolin into thin strips.  Made the stuffing for the clams. Scrubbed the shells and put them in the fridge to fill later.

We had celery/bleu cheese/black olives in the afternoon with some figs, dates and nuts. Later we fried the smelt and stuffed some 'shroom caps.  I was done. Spent.

Guess we'll have more fishies for lunch tomorrow since dinner isn't until 6.

honeyglazed ham cured for 30 hours over apple chips and hickery slow cooked for 6 days yams tangysweet citris sauce raisens and marshmello baked beans scallop potatoes bacon wrapped scallops homemade pumpkin pie and english triffle

My brother and one of the funniest things I remember   when we were small was the little baby squids, they had this dye in the eye, it was purple,    Our hands would be stained with it!   You could tell all the Italians at Midnight Mass, we had dyed hands and smelled of fish, We use olive oil for shmelt

We also do the "seven fishes" we call the Vigil...on Christmas Eve

Baked stuffed Calimari
Smelts (lightly seasoned and deep fried in peanut oil)
Scugilli
Clams Casino
Shrimp Scampi
Baccala
Fish

Then on Christmas Day....it goes down hill (as far as the food goes)...we go to my mother in laws house...she doesn't cook...She buys a big ham and puts out some sandwhich rolls and deviled eggs and some sort of au grat potato out of a box...and chips...then I have to watch football with them...I take it in stride...it's a small price to pay for such a good man and a pleasant mother in law and family.

Omg..... all that seafood sounds so terribly inviting! I am mostly vegetarian, but the mention of all those fishes is driving me nuts and making me drool.... Seafood is my biggest weakness!

And don't be surprised if some of your delicious food goes missing. I will have teleported it over to Copenhagen.

We're not going to quite get to Seven this year.

Calamari & Zucchini Fritti - marinara
Smelt (I have no idea so I'm going to flour and fry in olive oil)
Mushrooms stuffed with crab imperial
Iced shrimp with cocktail sauce
Baked stuffed clams

Nephew made faces at the fishes so I'm going to make him a steak.  I also picked up so fig and provolone ravioli but that may be too much.

Every year we have dinner at our friend's house on Christmas and I bring the salad. This year it will be baby greens with spiced pears and cherries and chunks of English Stilton in some kind of nut oil vinaigrette..

For Christmas morning:

Poached Eggs on Crostini di fungi
Juice
Fresh ground coffee with real cream!  (hey, its once a year!)

For dinner:

Pork tenderloin prepared with maple syrup and pecans
homemade applesauce
Baked potato
Green beans almondine
salad
NY style almond cheesecake (my signature Christmas cheesecake)

Gotta get to the airport now.  Can't wait to see my sister and brother-in-law so we can EAT!!!

the seven fishes, raviolis,  
I got  one those rib eye roast.   panetone with a coin baked into it. broccoli puffy things!  
Potatoes smashed and gravy.

Pies,  italian cookies, white wedding cookies, various snacks fruit, cheese,  olive loads of olives!  i can't think lol!  

here is the problem I may miss it all, after all my hopes for a great Christmas, HGB so low,  Hubby may have to work, yes on Christmas day!    I dunno.

I'm worn out already....but it makes me hungry too!!
