I have herpes and I have been with my partner for a year and he hasn't gotten it yet. If you do happen to have it it isn't the end of the world. There are lots of people who have it and do not know they are infected.
You certainly may not have gotten it. You'll have to sit tight and wait, I'm afraid.

There is an excellent chance that if she has it, you don't have it! Transmission doesn't happy with every intercourse, just because someone is infected. Unlike gonorrhea or chlamydia, which is far more likely to be transmitted.

She is going for the type specific test in two days. She also saw her gynecologist today who ordered the specific tests and examined her to conclude that though she may be in a Herpes outbreak right now, she does not have lesions or sores.
Are my chances of having contracted it substantial, or is there any statistic suggesting there's a slight change I may not have gotten it?

I'm a little surprised if you've had a cold sore that your HSV 1 test is negative, but that does happen, the test isn't all that sensitive for HSV 1.
I would recommend retesting 4 months after the encounter and see what you get. I would also suggest that she get type specific antibody testing vs. what she has.

P.S. My last STD panel test was done on October 21st this year. Everything was negative, and I haven't had any recent exposure/sexual contact of any sort before October 21st or after October 21st until this December 1st incident.
Yes, I believe I have in fact had a cold sore in my lip area. A couple of times I was shaving and it got sliced off, which was surprisingly the end of it. Though it hasn't been a problem in my life, it has happened a few times. I don't know if it has anything to do with the fact that I had a bad case of Chicken Pox when I was younger.
I've lived in the US mostly and on average I've been tested twice a year, for all the major STDs, including HSV 1 and 2, the results have always been negative.

OK, so here's the deal. The IgM is useless. There are many false positives, and people who are already infected regenerate IgM so we can't make anything of this. The provider did the wrong test - they should have done separate HSV 1 and HSV 2 tests, but apparently, they did a combined test, HSV 1 and 2, which tells us only that she has been infected with one or the other, or there is a false positive on this combined test, which is common. In other words, we can't make sense of this test result.
Also, if she is infected, that doesn't mean that you are.
