Weekly Menus

I know this really isn't pregnancy related... But I need some variation in my meals, I'm tired of the same thing... Or the boxed dinners, I'm in school two nights a week and one night I have to go through drive through cause of what time I get out of class and what time hubby gets off work (I take him to work night a week to save on gas, he has to be at work at 2:30 and I have to be in class at 3 so I just take him, and go straight from school grab something to eat then pick him up cause he gets off at 11-I wait maybe an hour for him, or just less than)
You ladies have any good recipes of favorite easy meals that are also great for left overs (just one night a week)
I love to cook, and love trying new things....

My husband and I do a meal preparation day on Sunday afternoon where we decide our meals for the week and prepare everything by doing as much prep work as possible. Example I make his lunches and snacks for the week and cut veggies for meals and snacks so healthy food is easy to access and cut up. We love taco salades with rice, beans chicken or beef etc. Chili's in crockpot or other crockpot recipes. We usually do one pasta day a week, and another favourite is butterchicken, and he loves casseroles and sometimes we even have breakfast for dinner on lazy days it's so yummy though :) look on pinterest or online for some east recipe ideas and I'm sure you'll find tons. Meal planning isn't easy but once you get into a routine it's much easier.

Lasagna is good and keeps well for leftovers.  Stew is delicious especially with winter coming on. Soup or chowder are always good. I do a creamy chicken and quinoa soup that is a crowd pleaser for my crew. It is simple and healthy. 1 chicken breast cut up and cooked in soup pot with a little olive oil, I like seasonings so here is my list: sea salt, pepper, granulated garlic, granulated onion, turmeric, and a little paprika. When chicken is cooked add water and Chicken base to taste, add 1 cup quinoa, bring to a boil stirring occasionally until quinoa opens up, add a bag of frozen mixed veggetables, bring back to a boil, cut up a block of cream cheese and stir in. If you would like it a little creamier add some milk. If you want to thicken it, you can use and arrow root or flour slurry. It is usually done in 45min.

Look on pinterest... that's where I get my ideas... I've tried several that are really yummy and easy. Just search for easy meal ideas!

Chicken and dumplings is a good one for left overs. Also chili. My husband makes amazing elk chili!
