I'm think middle names are a perfect way of honoring family members. Pick a name from his side of the family or if he's really stubborn about it ask his mom to recommend some middle names. How's he ever gonna say no to his gf and his mom.
I think middle names are important because it gives a person another thing that proves identity. Notice how all official documents have a place for a middle initial and some online documents will not even submit without one. That is not a pain you want your baby to deal with in life. Explain that to your boyfriend and maybe he'll be a little more reasonable. I would just say not to go overboard because my parents gave me two middle names and it made my name entirely too long not to mention that now as an adult and on all of my official documents my second middle name is not listed.

What about a family name on his side, if it is attractive? Then he couldn't beef at you giving your son a middle name. My son's middle name is my stepdad's name.
In other words, some examples and scenarios:
Ethan Jack [boyfriend's dad's nickname, boyfriend likes his dad]
Ethan Gustafson [boyfriend's mom's last name, he loves her]
Ethan Harold [beloved grandfather of boyfriend]
and so on. At least Ethan will get a middle name that way.
I think middle names a great. In fact our children will have 2 :)
Alot of names could go well with ethan :)

I prefer unique names myself but those are all good traditional names :)
