Did the doctor say it is a problem? The food you eat affects stool color so I'm not sure what has you concerned.

From simple observation: for 32 years, my stools were of normal color: brown. I took an azithromycin pill during COVID in 2022 and suddenly had yellow stools from one day to the next, along with constipation. What I eat does not influence the color; it is a constant yellow. As for the doctors, it varies: my gastroenterologist is not concerned, but my general practitioner is worried.
Did you discuss with your gp that the gastroenterologist was not concerned? A specialist's opinion overrides a gp's.
Thank you for your feedback. I was able to get a second opinion from a specialist, who informed me that the color of the stool is never pathological in my case and is generally due to changes in the microbiota following my course of antibiotics in my case.
