Old Fashioned Creamy Mac & Cheese

It's cold, wet and dreary here tonight.  I needed comfort food so pulled out my old family recipe.  Since I need to watch my cholesterol, am trying to lose weight, and am on a one month gluten free diet, I am going to include the original, low fat and gluten free options you can use.  

Ingredients:
1 1/2 cups uncooked elbow macaroni (rice based if GF)
10 slices peameal bacon (this is what real Canadian bacon is)
1/2 cup chopped onion
3 tbsp. butter (or low cholesterol margarine)
3 tbsp. flour (or non-bean GF flours - I used 2 tbsp. rice flour and 1 tbsp. potato starch)
1 tsp. salt
1 3/4 cup milk (I used 1%)
2 cups shredded cheddar cheese (I used full fat - low fat just doesn't do it for me)
1 cup sour cream (I used reduced fat)

Cook macaroni according to package directions.

Broil bacon.

Saute onion in butter until tender.  Blend in flour and salt.  Gradually stir in milk.  Cook over medium, stirring constantly until smoothly thickened and boils.  Reduce heat to low.  Add cheese and sour cream.  Stir until cheese is melted.

Combine sauce and macaroni.  Pour into greasted 2 quart casserole.  Arrange bacon on top.  Bake at 350 F for 25 - 30 minutes.

I am having steamed green beans along with this.

You know that sounds really tasty I am not keen on the packet ones ,somehow they dont taste good , its fresh pasta thats good , and I hate to tell a secret my DH would not like.... I am partial to a bit of crispy bacon, but we gave up eating all meat except chicken and turkey...This recipe is going to be another when the family visit, in the new Year a crowd from jolly old Blighty ..
