As I've been up since 4 AM, I started cooking lunch early.
Looked in the fridge and spotted a couple of leftover, boneless pork sirloin steaks, which I had baked earlier in the week; nicely tender and lean. Hmmm, what to do to make these interesting?
Foodstuff: 2 cooked pork sirloin steaks (about 8 oz total) - cut into bite size cubes, 4 med carrots and 2 parsnips - dice, 2 sm onions - peel and coarse chop, 1 c each chicken and beef stock, 1/2 c red wine, 1/2 t ea red, white and black pepper, 1 can cooked black beans.
Method: bring the liquid to a boil and add-in all ingredients except the pepper. Simmer on high for 15 minutes, stirring occasionally. Turn to med heat and simmer a further 15 min. Stir in the pepper and beans, simmer on low for 10 minutes. Serve over egg noodles.
