I think your intuition could be right. I get something like this if I eat anything with sulfites in it. I discovered this by accident when exploring cooking with wine. It made me very sick. Garlic and onions are natural sulfites, too. I am allergic to alcohol, too, but cooking evaporates the alcohol. It was clearly the sulfites.
Check out some information about the basic food elimination diet online. You can go through this long process to find out what you're sensitive or allergic to.
I've had this sensation you were describing with similar foods. It did turn out to be food sensitivities and allergies. Since eliminating gluten and lactose and the things I'm most sensitive to, I haven't had this awful sensation that turned out to be GERD and even gastritis or duadinamitis.
Now, I CAN eat the turkey, because the problems were mostly the sulfites, gluten and lactose. Those things were bothering both my GERD and my IBS.
I've had those cardio tests. They were normal. Once I took care of the food issues and digestive issues, I didn't have the heart palpitations anymore.
