Are there always visible signs of xerosis? Is it possible to not have any symptoms? My skin looks fine and as normal as before this started occuring. I've been able to control my scratching increasingly better and substantially, less itching.

Itchy skin that isn't accompanied by a rash, is most often caused by dry skin (xerosis). Dry skin usually results from environmental factors that you can wholly or partially control. These include hot or cold weather with low humidity levels, long-term use of air conditioning or central heating, and washing or bathing too much.
Other conditions cause itchy skin as well. Skin conditions internal diseases like liver and kidney disorders,diabetes, iron deficiency anemia, irritation and allergic reactions to chemicals,wool,soaps,cosmetics and certain foods can cause itchy skin.
You can apply an anti-itch cream or lotion to the affected area. Oral antihistamine, such as Benadryl can also be used. You should take a comfortably cool bath and wear smooth-textured cotton clothing. You should choose mild soaps without dyes or perfumes and use a mild, unscented laundry detergent when washing clothes, towels and bedding.
Please take a second opinion from a dermatologist if the symptoms persist.

PS: I've been considering using the shampoo again just in hopes of it all stopping.
Yeah. I stopped about a month ago, when I realized it made my hair smell and I began noticing the itching. But the shampoo is the only thing that comes to mind that has changed - aside from no longer drinking orange soda (I don't need to drink something with 50g of sugar). As for my skin, it's soft/moist, no cracking, and doesn't look/feel flaky or ashy.
It looks completely the same as from before all the itching. I don't mean to cancel everything out but I can't even see stress as the culprit. Nothing upsetting has occurred. If anything, it's as if it's physiological but when ignored, it becomes extremely irritating for several seconds and seems just worth scratching.
And I forgot to add that the itching becomes severe around the back of the neck, stomach, and chest.

Everyone on this planet and probably many others has allergies. The fact that most don't know what they are allergic to doesn't mean anything. Try playing in poison ivy, some people can.
Stress is the usual culprit for all over itchiness. The next would be dry skin. If your looking at liver failure, My guess is you're stressed out.
Dryer pads and fabric softeners are horrible products that cause numerous problems. Food allergies are another potential problem, always look for things that changed recently.
