A way to reduce sugar spikes when eating sweet foods ?

In order to  reduce sugar spikes when eating sweet foods, how about:

a) Dividing the sweet food such as Pastry in to smaller chunks and eat those chunks over many hours ? ( rather than eating entire pastry in one shot ? Thus we spread the sugar spike making it smaller in height but wider.

b) Eat the Pastry (or preferably smaller chunks of it) along with other non-sweet foods , thus diluting the sweet and giving smaller ( i.e. flatter but wider) sugar spike ?

This is my personal opinion. I am not a medical person.
