Mutts are usually excellent dogs. They have fewer inbred problems, and are often stronger, and live longer.
Some breeds of dogs need a heck of a lot of exercise (for instance any breed of hunting dog/gun dog, collies/collie cross, springer spaniels....etc) So you would have to be there in the day for them, and like the outdoor life! Apparently, Greyhounds need a little less exercise than you think they might need. One good walk a day can be enough (with poo breaks etc in between) Toy breeds need less. But remember, to be fit and well, ALL dogs (like Humans) need exercise of some kind daily, and preferably outdoors.
One of the most important things, I think is whether that dog will be spending 8-9 or more hours a day locked up alone in a house, or crate, while the owner goes to work. That is a terrible lifestyle for a dog. Just imagine....he spends all night sleeping, then gets a quick 'walk' at seven am. then has to spend all DAY sleeping as well, before the exhausted owner gets home around six, and takes him for a quick 'walk' again, (and usually as soon as the dog has pooed, he is brought back again because the owner wants dinner!)
If you have to work all day, and your partner does too, and there is no-one to spend time with the dog/walk him etc, then you might consider paying for a professional dog-walker/dog sitter to come in for 2 hours in the day. Of course it's not the same as your company for him, but it works. However, I would vet the person who does this quite carefully first, and check their references, to make sure they know what they are doing around dogs.

That depends. An adult dog with some training may fit into your lifestyle better. If you are a very active person, you'll want a dog that can keep up with you. If you don't like walking and being outside, you might do better with a cat.
Seriously, what sort of lifestyle do you lead and how do you see a dog fitting into it? How much room do you have inside and out? Poo mounts up pretty quickly in a small yard, so take that into consideration. Are you prepared to walk your dog daily and go to training classes? Most important, are you prepared for the vet bills? Puppies need a few rounds of shots, and they can mount up. After that, it's minimum one exam per year for boosters, along with heartworm preventive if you are in an area where they're a problem. Dogs get sick just like humans do, so you have to be prepared to pay for a few trips to the vet for sick visits.
You may want to consider adopting a dog rather buying one from a breeder. Any number of purebred dogs end up in shelters, and there is a rescue group out there for every breed imaginable.
