Count calories. Figure out what your maintenance calories per day are, cut it down by at least 25%, and don't eat any more than that per day. For example, if you maintain your weight at 2000 calories per day, if you cut your calories down to 1500 per day, you would lose one pound a week. One pound is equivalent to 3500 calories.
Different diets work for different people. Low-carb doesn't work for everyone. If it doesn't work for you, then you need different kind of diet, maybe a more moderate-carb diet. Try leaving out the sugar, junk food, and grains, but add back in two or three servings a day of healthy but carb-y vegetables, and see what happens.
