Acid reflux/GERD/I don't know

Hi everyone,   I've started having acid in 2020 I went to my doctor several times and finally found a medicine that worked dexilant 60 milligrams once a day. I also took carefate 4 times a day for about a month all in 2020. In July 2020 I went to a GI specialist and had a endoscopy done, they found out I had mild gastritis from taking NSAIDS. I continued to take the dexilant everyday and stopped taking carefate. By mid August 2021 everything went back to normal, I ate what i wanted and still took dexilant until my insurance said dexilant was going to cost more so I started taking omeprazole 20 milligrams in late 2021. Still everything was going great then in March 2022 I went to my doctor and started only taking it three times then two times a week. Eventually I stopped taking it all together in Jan. 2023 I had no problems at all. Then all the sudden in June I started getting acid reflux again, I've lost 65 pounds since August and have been eating healthy. I went to my doctor a few weeks ago and he put me on omeprazole 40 milgrams once a day I also took pepto bismol once at night for about two weeks. I started feeling better, after I stopped taking pepto bismol the acid reflux is coming back, its about a 2 out of 10. I have no idea why it's coming back, it's so frustrating and I just want to go away. I went from eating whatever I wanted and having no acid reflux to eating turkey and cheese and I having a little acid reflux. Has anyone experienced any of this before? I need some sort of answers.
