I've been diagnosed with eosinophilic esophagitis, but my symptoms don't match?

Hello,  I have been battling stomach issues for almost 10 years.  I originally went to a GI doctor because I would feel very full after eating only a small meal, almost always in the evenings.  After an endoscopy, it was discovered that I have eosinophilic esophagitis.  However, many of the symptoms I don't have.  I never have food stuck in my throat or have trouble swallowing... Here are the symptoms that I have on a regular basis.  I feel very full in the evenings, and the bloated sensation can last for hours.  When I attempt to sleep, my body continually jerks me awake as I fall asleep.  This will continue for hours.  I try to prop my body up so I am not laying flat, and usually have to leave my bed and move to a recliner.  On many occasions, the full feeling is too much to bear and I end up vomiting numerous times until my stomach is empty.  Whether I vomit or not, my appetite is very low the next day.  I have had two endoscopies and a stomach emptying study.  The stomach emptying study came back regular, and the endoscopies always come back with eosinophilic esophagitis.  The first diagnosis put me on Aciphex for almost 2 years.  After, I was able to stop taking the medicine and had no issues for 3-4 years.  Then symptoms started to return.  This time, I was put on Nexium (twice a day, before breakfast and dinner).  The nexium seemed to help, but really reduced my appetite.  I stayed on that for 1 year and then slowly began reducing until I was no longer taking it.  That only lasted 3-4 months before the symptoms started returning.  I have lost a considerable amount of weight over the years, and miss not being able to enjoy eating foods, as I fear being up all night with stomach issues.  In the research I have done, I wonder if I have an excessive amount of stomach acid?  If so, do you think that nexium is a good fix for that?  Any other suggestions would be greatly appreciated.  Thanks in advance for your help and support!
