Stringy stools?

So I’ve been on a gluten free diet for almost a month now, i has intense pain when I ate gluten, followed by constipation and diarrhea, and occasional blood after having a bowel movement. Now I feel much better, but sometimes after certain things I eat that I suppose my body just doesn’t like, I get diahrrea followed by constipation and followed by stringy stool. Is this just my body getting use to the new diet now? I remember someone telling me that stringy poo is only dangerous if it’s constant and the only consistency that your having for a longer period of time.
