I think it highly unlikely that, even if you were to have a physical specifically for adoption purposes, they would test you for hep C. I don't think I would disclose it on any application for adoption.
I am an adoptive parent but went through the process so long ago (1981) that I cannot recall having a physical. I didn't know I had hep C then, of course, so it was a non issue.

I know a couple who recently adopted a child from Guatemala. During the process they both had to undergo physical exams - in fact that is how she discovered that she had cancer. Even with cancer, they were able to adopt. Good luck.
I can't see ANY reason at all why you couldn't..
It may not even be something you need to disclose.. Check with your adoption agency..
THERE ARE SO MANY PEOPLE WHO HAVE HCV that don't even know it.
So I highly doubt it would stop you.
