Hs v 1

What is the chance of transmitting hs v1 by a water bottle but no outbreaks!

There is no way to put a number on this, since so many variables affect this - how long in between the other person drinking and you drinking, the temp of your environment, etc. It's possible, for sure. Do you know if the person you shared with even has hsv1?
