Ok here is my dish Chicken N potatoes
1 package of chicken (Strips or breasts)
6-8 Red potatoes
1 red pepper
1/2 onion
1 small bottle of Zesty Italian Dressing
Preheat oven on 350, place chicken in the pan (13x9) Slice onion, red pepper and potatoes. Put the potatoes around the chicken, not on top. Then put pepper and onion on top of potatoes, little on chicken. Now put the dressing all over the potatoes and chicken. add salt and pepper and for more kick you can at red pepper seasoning...
Cook for an hour. YUMMMY
Nissah that veggie dish sounds delicious I eat chicken so I will put some in I also have written down sassys Chilli as I do make a lot of chilli also curries ,any Indian folks out there all Indian curry recipes would be great ....
Here are three of my favorites, my mother used to make them, I sure miss her cooking:
CHILI
Chili Con Carne Block (Johnson's)
1 large can of tomato puree
1 or more pounds of hamburger'
1 large can of kidney beans undrained
1 large onion
1 good size Jalapeño pepper, diced
A couple of dashes of Cumin Powder
Cayenne Pepper
Honey to taste
Good dose of chili powder.
Half of a small pkg of spaghetti. Cooked first.
Cook the onion in oil until it is transparent, put in finely chopped hamburger. Add chili block, can of kidney beans and puree. Salt.
Mix well, let simmer, add the cooked spaghetti.
Enjoy.
Here is delicious version for what we called "American Spaghetti"
AMERICAN SPAGHETTI
1 pkg of spaghetti (2 lbs)
4 large cans of tomatoes
1/2 of a 2 lb box of Velveeta cheese
6 strips of cooked bacon, crumpled it into small bits
Bring water to a boil, add spaghetti, cook until tender.
Add the tomatoes after they have been squeezed to very small pieces, you can drain the tomatoes, but, I wouldn't the sauce makes the spaghetti more flavorful.
Add the cheese after it has been cut into cubes, this helps the cheese to melt faster.
Add the pieces of bacon
Cook slowly and stir until cheese is melted, this is the longest part of the entire cooking.
Enjoy.
And finally, we need dessert, right, here is an outstanding one from the South.
CHARLOTTE RUSSE
3 eggs
1 cup of sugar
1 quart of pure whipping cream
2 envelopes of plain gelatin
1 teaspoon of vanilla
Lady Fingers
Cream yolks of eggs with sugar, add beaten egg whites and vanilla, add pint of cream, whipped stiff, stir well. Dissolve gelatin in eight tablespoons of whole milk, set pan in double boiler (keep water boiling) must be put in mixture hot. Stir into egg mixture, set aside to congeal about 1 hour. Line dish with Lady Fingers, add custard and top with other pint of cream whipped stiff. Garnish with Maraschino Cherries if desired.
ENJOY.
Hot Vegetable Casserole
Cook 1 cup Uncle Bens brown rice
Boil 500gram bag California Mix vegetables
Grate around 1 cup cheddar cheese
3 cups mushrooms sliced
Prepare 2pkg Hollandaise sauce-I just use 1/2 cup butter for the 2 packages.
Put cooked rice on bottom of 9x12 casserole dish. Add mushrooms, mixed veggies, then hollandaise sause. Top with cheese and bake 45 minutes in a preheated 350 oven.
I sometimes put cooked chicken or salmon in this under the veggies. It is my favorite dish.
You can also use the block of Velveeta cheese instead of shredded cheese. I sometimes use the Velveeta and I will melt it and pour it over everything! LOL!
Yeah we eat REAL healthy...LOL!!!! You can also substitute hamburger meat for Turkey.
I cook this one about every 6 months:
2 lbs. hamburger meat
1 pkg of Taco Seasoning
1 can of Rotel (drain)
1 can Ranch Style Beans (drain)
1 cup of shredded cheddar cheese
1 can Cream of Mushroom Soup
1 pkg of tortillas (the big one of about 20)
Preheat oven to 375 degrees. Brown the hamburger meat, drain. Add 3/4 cup of water and mix taco seasoning. Bring to a boil, then simmer for 5 min. Spray baking pan (13 x 9) with a non-stick cooking spray, then line the bottom with tortillas. Once taco meat has simmered for 5 minutes, add can of (drained) Ranch Style Beans and 1/4 can of (drained) Rotel. Layer the mix onto tortillas, sprinkle with cheese. Make as many layers as you want (I usually have 3). In a separate bowl, mix the remaining Rotel and Cream of Mushroom soup. Pour over the top layer of tortillas and bake at 375 for about 15 min.
Wow.... can you tell I wrote that before my first cup of coffee?
1/2 cup Mayo and put it in a flour tortilla! ;)
I just made a YUMMY Wrap last night:
Grilled Chicken breast chopped in cubes
Sliced Avacado
Sliced red pepper
Watercress
In bowl mix:
3 tbs fresh Tarragon
1/2 Mayo (I use Veganaise)
1 tps lemon Zest
2 tbs lemon juice
Put the chicken in the bowl and mix
Now put everything in a flower tortilla! Yum Yum!
OMG I have never thought of some of these recipes, hamburger meat pie hey thats great, will do that this weekend I love this as I get so stuck for anything interesting nowadays and the husband moans away yet doesnt cook him self..HUMMMI will eat healthy all week but want something decadent at weekends thats okay isnt it ...?I have made Strogonauf a few times in the past but it does need red meat,. I will do the hamburgher one with ground Turkey, by the way when I made Strogonnauf I poured in some white wine, adds a bite to it.
veggie kaboba on the grill, marinate in cal olive oil and vinager with many herbs, i make chicken ones too for the kids, w chicken and veggies, you can buy the kabob sticks at butcher shop, I use purple onions, tomatoes, zucchini, bell peppers usually green and red, you can use what ever you like, potaotes dont stay on well, most use mushrooms I just dont like them. I add garlic, fresh and minced, and parsley, and always either basil or oregeno to the marinade, my kids like spicy so I kick it up a notch for them a dab of buffalo sauce or some hot sauce.
ham bbq!!!! it's a pittsburgh thing but so good! and super messy! lol.
all it is, is chipped ham (another pittsburgh thing, i think for other places it's just super super thin chipped chopped ham) and bbq sauce. you throw the chipped ham and bbq sauce in a frying pan and cook it until it's warm/hot and then slap it onto some bread.
beef strogonof. (sp) that is 1 lb ground beef, egg noodles, 12 oz of sour cream, cream of mushroom soup and paprika. you brown the ground beef and drain it. (while cooking the egg noodles separately) after draining the ground beef you mix in the sour cream and mushroom soup and simmer on a med/low heat. once it starts to bubble and thicken throw in some paprika (to your taste). once the noodles are done, drain and put onto your plate. put the ground beef "sauce" on top and enjoy. that is actually one of dh's FAVORITE dinners i make.

Here's an easy one, but not too healthy!
Brown some hamburger meat (at least 1 lb), top it over a pie crust, add some Picante sauce and velveeta cheese. Put on the top pie crust and bake (follow baking directions of pie crust for temperature and time in oven).
It's soooo super easy and delicious!
oooh Lovely and not healthy we need those treacherous recipes sometime s but not all the time, heres one of the Brits ...for special occasions,,,,, English trifle...you can actually have a healthy one or an 'unhealthy' one, Melt down 2 packets Jello, add some fresh fruit, sponge cake and a few crushed wallnuts, rum( optional) into the fridge to set, out of the fridge... spread on Custard /Flan then whipped thick cream/coolwhip...Topping ,chuck some blue berries/strawberries on top.Chill again, . Serve and eat.....Okay I am on a Roll. ......Corned Beef pie, for meat eaters, pie pastry, mash spuds, potatoes(, to you who dont know old English,) throw in some grated onion ,corned beef ,((out of a can) seasonings, add some gravy to moisten , pop a pastry lid on top, then watch your hips get a size bigger.....
