Love this forum.. here's a staple at my house.
I am not a pro at recipe writing.. if you think I am not clear enough and have any suggestions feel free to let me know.
Ingredients:
1 cup red lentils
2 tsp curry powder
1/2 tsp turmeric
1 sprig of curry leaves (options) - if I don't have any at home I leave this out. you can buy curry leaves at most ethnic food stores
salt to taste
1 green chille - chopped (if you like less spicy take the seeds out of the chillie)
2 cloves of garlic - sliced
1/2 an onion- sliced
1/2 cup coconut milk (if you prefer a healthier version substitute with regular milk you use at home)
Wash the red lentils until the soapiness is cleared (changing the water about 3 times).
Put in a pot and put water to cover the lentils. Lentils swell almost 3times it's size when cooked so make sure to use a tall enough pot to hold it.
Add the curry powder, salt, curry leaves, turmeric, garlic and onion and cook in medium heat until the lentils are soft and all the water has been absorbed to the lentils. Then add the coconut milk and bring it to a boil.
This is great with Steamed rice or any kind of flat breads like Naan..
you can substite the red lentins with canned chick peas as well..
