Food, Food , Food!! MMMMMMM

is anyone else canning/freezing garden veggies?  omg we are running a full bore canning operation here! we've been to the store like 8 times in the past 10 days to buy more Mason Jars and pickling seasonings etc.  so far from our cucumbers we;'ve made about 30 jars of pickles w/peppers and green tomatoes (and even green beans mixed in some of them too), 20 jars of salsa w/extra cilantro (omg its the BEST ever!!!) and about 6 jars of spaghetti sauce, and then another 5 of just tomato chunks to use for chili or whatnot.  THis is first year we've utilized our garden better.  Oh I froze a bunch of sweet corn too that i cooked and de-cobbed and sweetned, and made frozen bags of cream corn too.   This year has been a banner year for our garden. Tons of squash (we found our new favorite is spaghetti squash cooked til tender and then add seasoned bread crumbs, pepper, butter and melted cheese on it!!!! MMMMMM.  Then stuffed zuchini, zuke bread,  kholrabi, sweet snow peas (the best ever),  gourmet red lettuce, watermelon (not ready yet), cantaloupe, pumpkins, bell peppers out the ying yang (I've made a ton of stuffed bell peppers this summer and we still have a ton growing). Green beans, wax beans, purple beans, (which equate into about 10 batches of yummy green bean casserole w/french fried onions) and also blanched and frozen ones for winter. Then theres teh cabbages- red and green for coleslaw, stews, soups and my famous brocolli/cabbage slaw. We have eggplants coming soon and potatoes, lima beans, and about 200 lbs more of tomatoes yet to ripen! I cant believe how much we have this year! Theres other veggies Im forgetting too.....carrots, beets, cauilflower, brocollli, onions, parsley, chives, dill...  Im soooooooo happy that we will save a ton of money on grocery bills indefinitely! not to mention the stuff is way more delicious than you could ever buy in the store.   OUr next door neighbor is doing a ton of fruits, so all summer he has been bringing over his excess stuff - tons of strawberries (earlier in the season),  peaches, pears, black berries, raspberries and apples soon.  I feel like Im royalty or something here.  Honestly the only thing ive had to buy foodwise at the grocery lately is just meat, cereal, bread and eggs, soup sauces etc. Im lovin it!

We had so much flooding this spring and early summer, we got our tomatoes in really LATE...and I've basically been too depressed to have the energy to take care of them..=( the weeds are taller than the plants, I all but forgot about them...maybe I should go out there to see if there are any survivors...I'm jealous...

hey sounds like that you will not have too do lots of shoping then you will be sick of eating it all when you get down with it all

My freezer and pantry is packed with fresh goodies for the winter months its good now and will be even better later YUMMY
