hey good lookin, whats cookin? Veggies galore here

omg i went nuts lately buying veggies and picking the few that are ready in our garden so far and now I have so much stuff here I dont know what to make next! Last night i made stuffed bell peppers and fried zuchini and fried green tomatoes.

tonight Im gonna have to do a large garden salad, steamed  or stir fried fresh green beans, snap sweet peas (both in the pods for the young ones and just the peas from the mature ones), brocolli, carrots, egglpant, zuchini, yellow squash and red and green cabbage LOL   also i got some fresh delicious tomoatoes from the farm down the road and their cukes too. (I havent bought tomatoes at the grocery in about 2 months now due to them being so nasty tasting and so expensive)

whats everyone else having? lol

tonight Im making egg salad for sandwiches. Used a dozen eggs so it will last for a day or so ( i hate cooking when its so stinking  hot- supposted to be mid 90s for a while, yuck) and another huge garden salad. tomorrow I'll also make cold pasta salad, brocolli slaw and dont know what else yet.

Nauty theres so many things you can do with squash, and also depends on which kind it is. Yellow Crookneck or Green Zuchini's usually taste good fried with salt, pepper and bread crumbs,  but you can use many other ways including in a mixture of different veggies in a stir fry or casserole with a creamy sauce. You can also split Zukes annd stuff them with a filling similar to belll peppers. Zuke also makes great zuchini bread. Acorn squash and butternut squash are best if you split, gut and bake w/ brown sugar, cinammon and nutmeg.  The list can go on and on lol.  I love all veggies alot!

if its spaghetti squash..cut in half long ways, scoop out the yuck, put butter and a little brown sugar in each half. then cover with tin foil and bake for about 45 minutes!! Yum Yum.

Cut it in half lengthwise, hollow it out, mix in some of the seed with HB meat season, as if taco's, put the cooked meat into each half & sprinlke your favorite cheese on top, place them into the oven till cheese melts.......... ohh forgot, boil it for just a FEW minutes before you...."Gut it like a fish"!!!!  ................Taco squash!!

I love stuffed bell peppers.....you can keep the squash.....blaaaaa.  I think it's cool that you grow your own veggies.  Mine are still growing...planted late..:-(((  but, I have lots of tomatoes....they are too expensive.  enjoy !!
