I didn't mention this, but my mother is an RN nurse (has been since I was young) I took a picture of the stool and sent it to her, and she said I was just fine

Well..it could be nothing,it could be something...you will not know untill you see a doctor I guess...you have nothing to loose if you consult one more doctor.In any case I dont think that you should get anxious about this.Just see a doctor everything will be ok.
I know they say, that you should not see mucus in your stool, but when I see it in mine, its not much, its the kinda of the same color as the stool, and the stool is kindly runny, but I have been drinking a lot of water since its been over 100 degrees for almost a month now
Maby what you are reffering as mucus is just your stool? If you are possitive about that you should go to see a doctor again.Maby a different one.But it could be due to your anciety that you have diarrhea and you are thinking its mucus...
Nope...never have, they did ask if I have been using the bathroom like normally and I said yes, basically, they did a urine test...and I tested negative for everything and they said I was just fine, but they did ask if I was under any stress

Anxiety can cuase you loss of apetite!It is very logical that when you are in extreme anxiety you don't think about eating.I have been in the same place I did not have apetite for anything...and I didn't feel hubngry.You should also know that when you eat less than you are used to..the stomach ''closes'' to adapt...like when you are in a diet.From what you describe I think its perfectly normal and its because you are anxious.I think that you have to work your anxiety issue and the hungryness will come back it self :)
