In my experience with my son, Jesse, at that age we had the same issues. In his case it was candy. Working with his physician, he recommended taking extra blood test and adding a few extra units of insulin to offset the spikes in his blood sugars.
While he didn't like the taste of sugar free candy, we worked with his Dr. to try and regulate his blood sugars.
I highly recommend reading labels in any ice cream (sugar free or otherwise) and if you are counting carbs, take that into account.
It is hard for a parent to restrict sugar intake of a child with diabetes if they are determined. I'm not sure if this is the case with you. On your physicians advice, he may recommend
in not cutting out all ice cream, but to keep it as a once in awhile treat.

Thank you SO much for your answer!! It is wonderful to know that my child may (with his doctor's help) be able to have a sweet now & then.
