Hello and hope you are doing well.

Throat congestion and white patches could indicate a throat  infection. In response to the infection the body produces soft white debris which collects in the tiny indentations. Repeated salt water gargles will help. Mix one teaspoon of salt in 1 cup of warm water and gargle. If the patches increase in size or become painful or if you develop fever or breathlessness then consult your doctor or go to the ER.

Hope this helped and do keep us posted.

You need to get back in to see the surgeon who did your tonsilectomy - to me (keep in mind I'm not a physician), it sounds like you have an infection that will probably need to be treated with antibiotics.

If you can't get in to see your surgeon immediately, even a visit to your regular family doctor could determine if there is an infection or what they think it might be - but you need to see SOMEONE!

It has me concerned that you say it feels like your airway is compromised and your throat feels like it's closing in.  These could be very serious symptoms, so please do not delay in getting medical attention - even going to the ER or urgent care if you can't get in to see anyone else.

Best of luck and please keep me posted on how you're doing.
