Not breathing normally, something feels wrong within throat..

My throat is causing me to not breathe normally. I can no longer just relax my face and breathe like a normal person. I constantly have to be gathering saliva and swallowing or chewing gum(which probably serves as just a distraction). If I don't do this and just relax my face after like 30 seconds I will cough violently like I was just choking and feel like I need to throw up but will hold it down by swallowing saliva. With all this being said, I can get air fairly easily. It has just become a rather discomforting manual process.

Either this is psychosomatic and you have an anxiety problem or something is wrong that you need to see a doctor about, such as a problem with your esophagus which can be caused if you suffer from reflux.  As you describe it, though, it sounds psychosomatic because if chewing gum fixes it obviously that wouldn't fix a structural problem.  Are you an anxiety sufferer?  Do you get caught up in stuff like this besides this one thing?

And does this happen when you're busy and distracted and not thinking about it?
It kind of happens all of the time. However, because it doesn't actually hinder my ability to get air when I am busy and distracted it doesn't really effect me the same way. The chewing gum I feel is just another way to sort of distract myself so it is not bothering me too much. Not a complete fix. Since it doesn't actually impair my ability to breathe if I am doing something that involves plenty of mental or physical effort it's still there but I am not fixated on it so everything is sort of normal for that small amount of time. However, 95% of the time it is bothering me  throughout everyday activities like grocery shopping, laundry, and other routine activities that aren't too demanding.

I have no history of anxiety that would impair my physically in any way. No other symptoms are present

You don't need a history of anxiety to get anxiety.  All of us who have anxiety once upon a time didn't have it.  I have no idea if this is psychosomatic or not but it sure sounds like it is and you haven't gotten any other answers.  I went through a period of time when I was a teenager when I was clearing my throat all the time.  I did have allergies, but I didn't really have to be doing that and eventually I figured that out and stopped doing it.  But until you see a doctor and get a diagnosis you won't have ruled out other things.
